Where do donuts come from?

According to sources, donuts became popular in Hungary in the 19th century, and both the French and Germans have documented their origin story, as two legends are known about this pastry.

According to one legend, Queen Marie Antoinette discovered the French pastry called beignets when she escaped from a Carnival masquerade ball and bought a donut from a street gingerbread maker. The master was then summoned to the palace, the recipe was requested from him, and the royal pastry chef refined it — thus the pastry became a favorite of both festive feasts and the people.

According to the Viennese, the carnival donut was "invented" by Cecilia Krapfen, who, in her nervousness, according to some sources wanted to throw the dough she was shaping at her husband, or according to others at a customer after she was widowed, but the dough went astray and landed in hot fat — in the 1800s.

Nowadays, more than a hundred varieties of donuts are known, and we can find a variation of them in almost every part of the world.

Traditional Carnival Donuts

Ingredients:

  • 50 dkg all-purpose flour
  • 1 teaspoon salt
  • 2.5 dkg yeast
  • 3 dl milk
  • 4 tbsp sugar
  • 1 packet vanilla sugar
  • 1 egg yolk
  • 7 dkg margarine
  • 2 tbsp powdered sugar
  • 5 dl sunflower oil

Instructions:

  1. Activate the yeast in lukewarm milk with 1 tablespoon of sugar.
  2. Add salt, remaining sugar, vanilla sugar, activated yeast, room temperature margarine, and egg yolk to the flour.
  3. Knead thoroughly. Let rise in a warm place for about 1 hour until doubled in size.
  4. On a floured surface, roll out to 1.5 cm thickness, then cut out rounds with a medium-sized, floured pastry cutter.
  5. Make a hole in the center of each round with your thumb, being careful not to tear the dough.
  6. While the dough rises, heat the oil in a taller pot.
  7. On medium heat, fry on both sides, turning several times, until caramel brown. Be careful as they fry quickly.
  8. Let excess oil drain on paper towels.
  9. Finally, dust with powdered sugar and serve with jam of any flavor.

Churros, the Spanish Donut

Ingredients:

  • 2.5 dl water
  • 2 tbsp brown sugar
  • 1 pinch salt
  • 8 dkg butter
  • 15 dkg all-purpose flour
  • 2 eggs
  • 0.5 teaspoon vanilla extract
  • 2 dl sunflower oil (for frying)
  • 3 dl chocolate pudding (for dipping)

Instructions:

  1. Pour water, brown sugar, salt, and butter into a pot and bring to the heat.
  2. When it boils, stir in the flour and keep stirring until you have a large ball. Remove from heat and let the dough cool.
  3. Add eggs and vanilla extract, then use a mixer to blend until smooth.
  4. Heat oil and prepare cinnamon sugar so you can immediately roll the fried donuts in it after draining.
  5. Attach a star-shaped tip to the piping bag.
  6. Fill the bag with the dough and gently press the approximately 5-10 cm strips of dough into the hot oil.
  7. As soon as they start to brown, remove them and coat with cinnamon sugar as the final step.

Simplest Cottage Cheese Donuts

Ingredients:

  • 25 dkg cottage cheese
  • 25 dkg all-purpose flour
  • 3 eggs
  • 175 g sour cream
  • 1 tsp baking soda
  • 3 tbsp sugar
  • 1 pinch salt

Instructions:

  1. Mash the cottage cheese with a fork and mix well with all other ingredients.
  2. Heat oil in a pan, then drop heaping teaspoons of the mixture into the oil and fry both sides until golden (about 6-7 minutes per batch).
  3. Blot excess oil from the finished cottage cheese donuts with paper towels.
  4. Dust with powdered sugar or cinnamon sugar and serve while still warm.
+Green tip: If you made too many donuts and the leftovers have become dry little balls, you can make a bread pudding from them. Soak the diced donut (whether cottage cheese donut or any other kind) in lukewarm, sugared milk. Place a layer in a baking dish, then add jam. Add another layer of milk-soaked donut, then jam, and continue until both ingredients are used up. Top with whipped egg white and bake in the oven until golden brown.
