French ratatouille from vegetable and fruit munch

Although Hungarian sausage-based lecsó is not always considered a diet meal, a bit further west in France, they enjoy consuming it even while dieting. One of the main differences between Hungarian and French lecsó is that while Hungarian lecsó is made with sausage and cooking oil, French lecsó, or ratatouille as it's also known, contains only vegetables and olive oil instead of cooking oil. Thus, it absolutely fits into the category of diet-friendly meals.

Ingredients:

  • one munch from Deli Land, CBA, or any other vegetable and fruit munch
  • 250 g tomato sauce
  • salt
  • pepper
  • basil
  • origano
  • 1 tbsp balsamic vinegar
  • 1 tbsp xylitol/erythritol
  • 4 tbsp olive oil

Instructions:

  1. Pour 2 tbsp of olive oil into a pot and sauté the diced onions in it.
  2. Once the onions are braised, pour in the tomato sauce and start heating. Meanwhile, mix the spices, xylitol, and balsamic vinegar in a small bowl.
  3. Once done, pour this mixture into the tomato sauce and bring to a boil.
  4. Spoon the tomato sauce into a round heat-resistant dish.
  5. Arrange the sliced vegetables in alternating, beautiful rows on top in a circle (if you want to be very aesthetic, alternate by color). If there are vegetables that you couldn't cut into neat round shapes, it's best to place them at the bottom of the dish directly on the tomato sauce.
  6. Once done, brush the top with olive oil and place in a preheated 200°C oven for about 45 minutes until nicely golden.
  7. Remove from the oven and let cool slightly, then sprinkle with salt and dried basil.
  8. Serve with fresh basil leaves.
  9. Before tasting, remember that in addition to creating a delicious and diet-friendly meal on the table, we've also done something good for the environment. Bon appétit!

All-fruity cottage cheese oat pancakes

Since bananas often ripen faster than expected, vegetable and fruit munches very often contain bananas, along with just a little bit of various fruits. Actually, we've not only written an article about creative and simple ways to use overripe bananas, but we've also made a YouTube video about it with Amigos. This recipe, which belongs to the category of sweet diet-friendly meals, welcomes all kinds of fruit with open arms, so it can be excellent if you're not sure what to do with your fruity munch.

Ingredients:

For the batter:

  1. 1 egg
  2. 5 cl whole grain oat flour
  3. 0.75 dl sparkling water
  4. 9 dag low-fat cottage cheese
  5. xylitol/erythritol
  6. lemon zest
  7. oil for frying
For the cream:
  1. 6 dl plant-based milk
  2. 6 tbsp xylitol/erythritol
  3. 40 g sugar-free chocolate pudding
  4. 100 g dark chocolate
  5. vegetable and fruit munch

Instructions:

  1. Measure the batter ingredients into a bowl and mix well, then let the batter rest for 10 minutes.
  2. While the batter rests, you can start on the cream. Cook the pudding with the milk and xylitol, stir in the chocolate while hot, and set aside to cool.
  3. Heat a small amount of oil in a pancake pan, then portion the batter with a spoon and fry 3-5 thicker pancakes.
  4. Then cut up the fruit in the munch and mix them together in a bowl.
  5. Serve the pancakes drizzled with chocolate sauce and topped with the reserved fruit.

Diet-friendly guba with food rescue

Our last recipe was inspired by a recent interview that appeared on the Life&Body website. Perhaps one of the most popular food category among munch locations is bakery munch, since who wouldn't love a chocolate croissant, a cheese pastry, or a baguette. In this recipe, we'll use not only a vegetable and fruit munch, but also a bakery munch.

Ingredients:

  • bakery munch
  • vegetable and fruit munch
  • 1.5 dl plant-based milk
  • 1 dl plant-based cream
  • 5 cl xylitol/erythritol
  • 1 egg
  • 1 tsp vanilla (and to taste, e.g., cinnamon or cardamom)
  • 1 tsp cornstarch
  • 2 tbsp brown sugar
  • half a lemon's juice and zest

Instructions:

  1. Cut the baked goods into pieces and place them in a buttered heat-resistant dish.
  2. Mix the milk and cream with the xylitol, egg, and spices. Pour into the dish so the pastry absorbs it.
  3. Chop the fruit and mix with brown sugar, cornstarch, and lemon, then spoon over the baked goods.
  4. Cover with foil and refrigerate for half an hour.
  5. Bake at 180°C for 35-40 minutes until done.
